Tony loves Slow Cook BBQ beef Brisket!

FOR BBQ SAUCE:

1 1/2 Cups ketchup
1/2 cup dark brown sugar
1/2 cup water
1/4 cup finely chopped brown onion
3 tablespoons cider vinegar
3 tablespoons Worcestershire sauce
1 teaspoon garlic powder
3/4 teaspoon freshly ground black pepper
(can use extra garlic (fresh) if you like also 2 chipotles in adobo sauce -finely chopped – if you have)

FOR THE BRISKET:
(SPICE RUB)

1/4 cup paprika
1 tablespoon chilli powder
1 tablespoon ground cumin
I tablespoon dk brown sugar
I tablespoon salt
1 teaspoon cayenne pepper
1 teaspoon garlic powder
1 teaspoon freshly ground black pepper
PIECE OF O’CONNELLS BEEF BRISKET

Place all of the BBQ sauce ingredients into slow cooker or roasting pan
(we line pan with baking paper) -stir to combine.
Place all of the ingredients (spice rub) for the brisket in a bowl & stir to combine
Cut the brisket in half to fit in slow cooker or pan. Evenly coat the brisket with the spice rub.
Cover & cook in slow cooker for about 10 hours or until fork tender.
OR cover with foil & cook in very low oven for about 7 hours or until fork tender
Make sure it is covered with sauce and does not dry out.
We use 2 forks to shred meat, discard any fat. put the shredded or slice meat back into the sauce & serve.
We serve with steamed green beans & mashed potato.
